Tacos de Arrachera

Ingredients:

4 Guerrero® Zero Net Carb Original Tortillas
8 oz skirt steak, thinly sliced
2 tbsp freshly squeezed lime juice
1 tbsp adobo seasoning
1/4 tsp black pepper
1/8 tsp salt
2 tbsp vegetable oil, divided
3 scallions (whole), trimmed
2 tbsp tomatillo salsa
2 tbsp chopped cilantro
Lime wedges, for serving

how to make it:

1. In large bowl, toss steak with lime juice, adobo seasoning, pepper and salt. Cover and marinate in fridge for 1 hour or up to overnight.

2. In large cast-iron skillet set over medium-high heat, add 1 tbsp oil. Add scallions and cook, turning occasionally, for 3 to 5 minutes or until lightly charred. Let cool slightly before slicing.

3. Wipe skillet clean and return to medium-high heat. Add remaining oil and seasoned steak. Cook, stirring occasionally, for 5 to 8 minutes or until evenly browned.

4. In small skillet set over medium heat, warm tortillas, turning once, for 2 to 4 minutes or until soft and pliable.

5. Top tortillas evenly with steak, scallions, tomatillo salsa and cilantro. Serve with lime wedges.

Tip: Mix and match with your favorite toppings — also delicious with diced onion, sliced avocado, pickled red onion and/or pico de gallo.
