Ingredients:

8 Guerrero Amarillas Classicas Yellow Tostadas
2 tbsp olive oil
1 cup diced ham
1/2 cup diced onion
1/2 cup frozen peas, thawed
1 cup refried black beans, warmed
8 eggs, fried
1/2 cup red enchilada sauce, warmed
1/2 cup crumbled queso fresco
1 jalapeño pepper, thinly sliced
1 avocado, halved, peeled, pitted and sliced
2 tbsp finely chopped fresh cilantro
Lime wedges, for serving

how to make it:

1. Heat oil in skillet set over medium heat. Cook ham and onion for 3 to 5 minutes or until ham is golden and onions are tender. Stir in peas; cook for 2 minutes.

2. Spread black beans evenly over tostadas. Top with fried eggs, ham mixture and warm enchilada sauce.

3. Garnish with queso fresco, jalapeño, avocado and cilantro. Serve with lime wedges.

Tip: Serve with a side of fried ripe plantains.
