Chorizo Tortilla Pizza

Ingredients:

4 Guerrero Nutri Ricas Carb Watch Whole Wheat Tortillas
2 plum tomatoes
1/2 red bell pepper
1/4 onion, cut in wedges
1 jalapeño pepper, halved and seeded
1/2 tsp salt
8 oz. cooked chorizo sausage, chopped
1 1/4 cups shredded Oaxaca cheese
3 radishes, thinly sliced
2 tbsp. finely chopped fresh cilantro

how to make it:

1. Make Pizza Sauce: Preheat broiler. Arrange tomatoes, pepper, onion and jalapeño on foil-lined baking sheet; broil for 4 to 6 minutes or until charred and tender. Transfer to blender; purée until smooth. Season with salt.

2. Add Pizza Toppings: Preheat oven to 425°F. Arrange tortillas on large parchment paper–lined baking sheet. Spoon heaping tablespoonful of sauce over each tortilla, leaving 1/2-inch border at edge. Top with chorizo and sprinkle with cheese.

3. Bake Pizza: Bake for 8 to 10 minutes or until golden and cheese is melted and bubbly.

4. Garnish Pizza: Garnish your finished chorizo tortilla pizza with radishes and cilantro.
