Ingredients:
12 Guerrero Fresquiricas Flour Tortillas
16 Ounces of Monterey Jack Cheese, grated
8 Ounces of chorizo, crumbled and cooked through
1/2 Cup of pico de Gallo
Salsa
4 Small iron skillets, 5 inch wide
how to make it:
1. Pre-heat oven to 400 degrees
2. On the stovetop on medium-low heat, heat skillets until they are hot, divide the grated cheese among the skillets and top with chorizo.
3. Carefully place the skillets on a baking sheet and put in oven and bake for 15-18 minutes until the cheese is melted and bubbling.
4. Meanwhile, on a hot comal, cook the Fresquiricas tortillas on each side until they are golden brown. Placing them in a tortilla warmer until they are ready to eat.
Remove the chori queso from the oven. Serve on a large cutting board or oven safe surface.
5. Top with pico de gallo and roll in to your warm tortillas. Enjoy with your favorite salsa.
